I will tell
you about my activities as usual in the kitchen and this time I will make one of
the Traditional Cakes, Lapis Legit ( Spekkoek ), Lapis Legit is no stranger to
Indonesians because there are many productions that make it easy to
reach then the price is friendly in the mother's pocket, indirectly discussing Lapis Legit will definitely think of
cakes that have many layers that have yellow color and each layer is
brownish and tastes distinctive so on this occasion I will explain how
to make this Traditional Cake.
Spekkoek (kue lapis legit or spekuk in Indonesian) is a type of Indonesian layer cake. It was developed during colonial times in the Dutch East Indies. The firm-textured cake is an Indo (Dutch-Indonesian) version of the European multi-layered spit cake. However it is not baked on a rotating spit, and contains a mix of Indonesian spices, such as cardamom, cinnamon, clove, mace and anise. The cake is made of flour and yolk and is rich in butter or margarine.
Spekkoek is popular in Indonesia and is served as a holiday treat, especially for natal, imlek, and lebaran. It is also served or given as gifts during many local festivities such as at birthday parties and weddings. In the Netherlands, the sliced cake is traditionally served for dessert in rijsttafel.
Prepare
the tools and ingredients to be used, then weigh according to the recipe
standard in making Lapis Legit, it is easy because it has to be patient
in working on each layer then each layer must be flat so that when we
cut later the results are good.
Beat
Eggs, Icing Sugar, and TBM until they are stiff as they like a make Sponge
Cake, use Icing Sugar to speed up the foaming process and the sugar
will dissolve more easily.
Then
add the Rum and Sweetened Condensed Milk, stirring until evenly
distributed, Rum serves as the aroma of Lapis Legit later but don't
over it too because it will give a bitter taste and excessive aroma.
After
that, enter the other dry ingredients that have been mixed first are flour, milk powder, Cornstrack, Baking Powder, Vanilla, and
Spekkuk Powder especially Lapis Legit. Add little by little to the absence of lumps in the dough.
The last
enter the melted butter, the melted butter is cold so cool it first or
do it at the beginning so the butter is cold if the hot butter will
affect the dough later, the dough will shrink due to heat and the egg
in the dough will cook so that the dough breaks .
If
the dough is finished then it's time to make the layer on legit, put
the dough into the butter-coated pan and the bottom give the oil paper
so that it doesn't bend at the time of turning, smooth the dough into
the mold and try to have a thickness so that the thickness is on each
layer same.
Then
put it in the Salamander until the top is browned then give the dough
again and do it repeatedly until the pan is full, to make Lapis Legit
mature the inside put in the oven for 15-20 minutes because when the
Salamander we only need the color of each layer so the dough not really mature.
Now
this is the result that my group makes, using a larger baking pan will
make it easier to flatten the dough so that each layer looks straight,
if at home the Salamander tool is not available we can also use the Oven
to make each layer brownish only using the Oven for a little while
getting brown color on the top or each layer.
