GREEK SALAD
          Greek Salad or Horiatiki Salad is made with pieces of tomatoes, sliced cucumbers, onion, feta cheese (usually served as a slice on top of the other ingredients), and olives (usually Kalamata olives), typically seasoned with salt and oregano, and dressed with olive oil. Common additions include green bell pepper slices or berries of capers (especially in the Dodecanese islands). Greek salad is often imagined as a farmer's breakfast or lunch, as its ingredients resemble those that a Greek farmer might have on hand.
          Outside Greece, "Greek salad" may be a lettuce salad with Greek-inspired ingredients, even though the original dish is distinguished by the absence of lettuce. Meanwhile, the variant without lettuce may be called horiatiki, "country salad", "peasant salad", or "village salad". Lettuce, tomatoes, feta (often served in multiple cube-shaped cuttings mixed with the vegetables), and olives are the most standard elements in an American-style Greek salad, but cucumbers, peperoncini (pickled hot peppers), bell peppers, onions, radishes, dolmades, and anchovies/sardines are common. In Detroit, for example, Greek salad includes beets, and in the Tampa Bay Area, it often includes potato salad. Dressings containing various herbs and seasonings are frequently used in the U.S. This style of Greek salad is rarely encountered in Greece.


WALDORF SALAD
          A Waldorf salad is a fruit and nut salad generally made of fresh apples, celery, grapes and walnuts, dressed in mayonnaise, and served on a bed of lettuce as an appetizer or a light meal. The original recipe was just apples, celery, and mayonnaise. It did not contain nuts, but they had been added by the time the recipe appeared in The Rector Cook Book in 1928.
          Other ingredients, such as chicken, turkey, and dried fruit (e.g. dates or raisins) are sometimes added. Updated versions of the salad sometimes change the dressing to a seasoned mayonnaise or a yogurt dressing. A variation known as an "Emerald Salad" replaces celery with cauliflower. The modern Waldorf salad also may include the zest of oranges and lemons.
         The name comes from the fact that the Waldorf salad was first created for a charity ball given in honor of the St. Mary’s Hospital for Children on March 14, 1896 at the Waldorf-Astoria hotel in New York City. Oscar Tschirky, who was the Waldorf's maître d'hôtel, and who developed or inspired many of its signature dishes, is widely credited with creating the recipe. In 1896, the salad appeared in The Cook Book by "Oscar of the Waldorf".


CHINESE CHICKEN SALAD
          Chinese chicken salad is a salad with chopped chicken; therein, flavored with and styled by Chinese culinary ingredients and techniques that are both common and popularly adapted in parts of the United States. Though many variations exist, common features of most Chinese chicken salads contain: cut romaine lettuce and cabbage (or other lettuce) chicken (typically breast meat) deep-fried wonton (cut dough skins) or rice vermicelli and nuts (sliced almonds, cashews or peanuts). A basic vinaigrette for the salad includes ingredients like vegetable oil, sesame oil, rice vinegar (or citrus juice) plus, optional seasonings such as dry hot mustard, sesame seeds, coriander and raw ginger or pickled ginger. In restaurants, Chinese chicken salad may be more embellished and offered as an American-style entree salad, similar to Caesar, Chef, and Cobb salads.
          Origins of the Chinese chicken salad are unknown, whereas it's believed to have originated from pan-Asian cuisine or fusion cuisine influences, rather than having actual roots in Chinese cuisine. Reasoning for that theory is that green lettuce salad is a dish of primarily Western origins.
