PRACTICE ACTIVITY 9

Hi guys, how are you today ? I hope you will be fine and a good day.
                  So today I would like to tell you about my practice activities in the kitchen for this week we make Buffet Menu, today is Western Buffet Menu is for the Appetizer are Shrim and Macaroni Salad, Southwestern Sweet Potato Salad for the Soup is Chicken Rice Soup for the Main Course are Breaded Fish with Salmoriglio Sauce, Beef Noodle Casserole, Braised Red and White Cabbage,Grilled Eggplant with Mouroccan Spieces, PotatoWedges and for the Dessert is Blackout Cake.
                 As we know Buffet is a way of serving food in a party or restaurant by putting food on a long table and the visitors take their own desired menu. The buffet is very popular in Indonesia as it is practical and reduces the number of waiters required in a reception. Today's buffet modification is to serve food on a separate table for each menu. This table can also be decorated so that a depot (eg a small hut). Well for this time me and my team get Appetizer Menu are Shrim and Macaroni Salad, Southwestern Sweet Potato Salad and than we make section to my team so thats why we are divided in two group to handle one menu and I handle Shrim and Macaroni Salad.
                 Actually for make this menu is simple just boiling the Shrim but before we marinate by salt, pepper, and lime juice to make the smell is gone and we boil also Maccaroni untik cook do not over cause will make maccaroni  Easily destroyed after that I'm make Mayonaice Sauce first for dressing. Mayonnaise  is one type of sauce made from the main ingredients of vegetable oil, chicken eggs and vinegar. Mayonnaise is commonly used as flavorings in foods such as lettuce or sandwiches. Some mayonnaise only use egg yolks or use lemon or mustard juice as a flavor.




         
     
                    The main ingredient in making mayonaise in salad oil and egg yolk, one yolk egg can bind 250 ml, actually we can used Mixer or Ballon Wish to make mayonaise just the point is when we make this you must control you mix to still stabil when you mix so the sauce not broken betweet egg and oil but still look good.
                 And this mayonaise ready to give seasening to tasted, after that we mix all ingredient all ingredient, and mix well after that add the sauce and mix again until well.

Hello Guys,           Kali ini saya akan menceritakan aktivitas saya di dapur, dan pada kesempatan ini sedikit berbeda seperti  biasanya karena kali ini saya akan membuat Tape atau Tapai.           Tapai atau tape adalah kudapan yang dihasilkan dari proses fermentasi bahan pangan berkarbohidrat sebagai substrat oleh ragi. Di Indonesia dan negara-negara tetangganya, substrat ini biasanya umbi singkong dan beras ketan. Ragi untuk fermentasi tapai merupakan campuran beberapa mikroorganisme, terutama fungi (kapang dan jamur), seperti Saccharomyces cerevisiae, Rhizopus oryzae, Endomycopsis burtonii, Mucor sp., Candida utilis, Saccharomycopsis fibuligera, dan Pediococcus sp, namun tidak tertutup kemungkinan jenis lain juga terlibat.
